HOMEMADE NOODLES


I've been making egg noodles lately, and they are really good - thick and more flavorful than packaged noodles. The first time I made them, I just broke an egg, stirred it to break it up, then added as much flour as I could mix in. After that, I floured a cutting board and kneaded the dough a bit before rolling it out as thin as I could (not all that thin) and cut it into strips. Then I dried them for about 24 hours....except during this time, when they were on the table, Chuck left a chair pulled out and Coconut got up there and ate about half of them, before I caught her. So I put what was left, up on the cabinet and the next day started on making more. This time I used two eggs and that made a more substantial amount of noodles. Also, this time, I divided the dough and only rolled out about a 5th of it at a time. Much easier to handle. Then I cut them narrower than before and spread them out on newspapers on the cabinet until this afternoon when I boiled them in a quart of chicken broth. When they were almost done, I added sauted onion and celery and what was left of the bok choy I cooked the other night. It was so simple, but so good.

I want to start making noodles somewhat regularly. But they are kind of time consuming - easy to mix up, but the rolling, cutting, setting out on paper to dry without any of the noodles touching each other, and then leaving them that way for 24 hours is somewhat of a pain. Still, it is worth it.
